1/4 pound salmon filet on top of a collection of diced onions, tomatoes, baked potato, bell peppers and sweet potato next to your choice of vegetable and fresh baked bread.
Something new is always happening... sometimes it makes it to the menu, sometimes not. Well how about Clancy's own Enchilada Sauce on a breakfast burrito. We take a soft flour shell, fill it with a scramble egg, sausage and bacon with onion, green pepper, refried beans and cheddar cheese and top it with our own sauce.
Now if meat is not in your diet... how about black beans, shredded sweet potato and mushrooms to replace sausage and bacon. I am gonna have one of each for lunch today with some freshly made sweet potato salsa and sour cream.
